How cute are these?! I’ve never made ice cream sandwiches until now. I made my favorite gluten-free peanut butter chocolate chip cookies and used @sodelicious vanilla ice cream for the filling to make gluten-free ice cream sandwiches.
Once the cookies were completely cooled, I turned one upside down, spooned a little ice cream on a little at a time and used a knife to gently spread it on the cookie. Once I had enough, I added another cookie on top and gently pressed down. I added some fun sprinkles, then rolled it up in some plastic wrap and put them in the freezer overnight.
This experiment was worth it, so DELICIOUS!! 10/10 recommend some gluten-free ice cream sandwiches in your life.
