This delicious Gluten-Free Grilled Mozzarella Pesto Sandwich is filled with fresh tomato slices, roasted red peppers and a spinach basil pesto sauce. It’s easy to assemble and has such great flavor.
I used slices of classic Bread SRSLY sourdough bread, that grill up nicely and are the perfect accompaniment for this sandwich.
I was able to grab a pack of vegan mozzarella from Miyokos to use on this sandwich and it worked really well! This mozzarella would also be great on a pizza.
