Wet Ingredients
- 1 cup peanut butter
- 2 tbsp coconut oil
- ⅔ cup coconut sugar
- 1 tsp vanilla extract
Dry Ingredients
- 1 cup gluten-free old fashioned oats
- ½ tsp baking soda
Mix-Ins
- ¼ cup No Whey Choco No No's or M&M's if not dairy-free
- ½ cup mini dairy-free chocolate chips
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the peanut butter, coconut oil, coconut sugar, and vanilla extract until smooth.
Stir in the oats and baking soda until well incorporated, then fold in the Choco No No's and mini chocolate chips.
Using a cookie scoop or your hands, form the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each cookie slightly and sprinkle with additional No No's and chocolate chips if desired.
Bake for 10 - 13 minutes, or until the edges of the cookies start to turn golden brown.
