Ingredients
  

Wet Ingredients

  • 1 cup peanut butter
  • 2 tbsp coconut oil
  • cup coconut sugar
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 cup gluten-free old fashioned oats
  • ½ tsp baking soda

Mix-Ins

  • ¼ cup No Whey Choco No No's or M&M's if not dairy-free
  • ½ cup mini dairy-free chocolate chips

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the peanut butter, coconut oil, coconut sugar, and vanilla extract until smooth.
  • Stir in the oats and baking soda until well incorporated, then fold in the Choco No No's and mini chocolate chips.
  • Using a cookie scoop or your hands, form the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each cookie slightly and sprinkle with additional No No's and chocolate chips if desired.
  • Bake for 10 - 13 minutes, or until the edges of the cookies start to turn golden brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire cooling rack.
  • Once completely cooled, store the cookies in an airtight container at room temperature. They can be kept for up to 5 days for optimal freshness and flavor.
