Healthy Avocado Tuna Salad
No mayo needed here! The avocado will add plenty of creaminess in this recipe. This healthy tuna salad comes together quickly and is very refreshing on a warm day.
- 1 can tuna
- 1 small ripe avocado
- ¼ cup cucumber diced
- 2 tbsp red onion diced
- 2 tbsp cilantro chopped
- 1 green onion chopped
- ¼ tsp garlic powder
- fresh lime juice ½ lime
- salt & pepper to taste
In a medium bowl, flake the drained tuna with a fork. Add the avocado to the tuna and mash with a fork, breaking up any large chunks.
Add cucumber, red onion, cilantro, green onion, and garlic salt. Stir together and add the lime juice. Stir again to combine. Season with salt and pepper to taste.
Chill in the fridge for 15 - 20 minutes.
Once ready to serve, toast a couple pieces of bread, add some greens and top with the salad. I enjoy serving as an open face sandwich.
