Ingredients

  • 1 cup creamy peanut butter
  • ½ cup granulated sugar
  • cup packed light brown sugar
  • 1 large egg
  • ½ tsp baking soda
  • 1 cup dairy-free chocolate chips or regular chocolate chips if not following a dairy-free diet

Instructions

  • Line two baking sheets with parchment paper and preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine creamy peanut butter, granulated sugar, brown sugar, egg, and baking soda. Mix until smooth and thoroughly blended.
  • Fold in the dairy-free chocolate chips.
  • Use a cookie scoop or a tablespoon to drop portions of the dough onto the prepared baking sheets, leaving about 2 inches of space between each. Gently flatten each cookie with a spoon or your fingers.
  • Bake one sheet at a time in your preheated oven for 10-12 minutes. Watch for lightly golden edges and set centers.
  • After baking, let the cookies cool on the sheet for 5 minutes, then transfer them to a cooling rack to cool completely.
  • Store your cookies in a single layer within an airtight container. Be gentle, as these cookies are delicate. Pair them with your favorite dairy-free milk for a delightful treat.
