Combine the eggs, brown sugar, almond milk, cinnamon, vanilla, and salt in a large bowl. Whisk to combine.
Cut the bread loaf into bite-sized pieces, then add them to the bowl with the egg batter. Toss the cubes until they are evenly coated. Make sure there are no dry spots.
I use parchment liners in my air fryer, but if you don't, lightly spray your air fryer basket with non-stick cooking spray. Place bread cubes in an even layer in the air fryer. Don't overlap them; you may need to do two batches.
Air fry at 350℉ for 10 minutes until golden brown and crispy. Serve with maple syrup and a sprinkle of powdered sugar.
