Peaches & Cream French Toast

Ingredients
  

  • 8 slices gluten-free bread sliced
  • 1 tbsp dairy-free butter
Batter Ingredients
  • ½ cup dairy-free milk
  • 4 tbsp gluten-free flour
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt
Caramelized Peaches
  • 2-3 peaches sliced
  • 2 tbsp brown sugar
  • 1 tbsp dairy-free butter
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
To Serve:
  • dairy-free whipped cream
  • maple syrup

Method
 

For the French Toast:
  1. Place all batter ingredients into a shallow bowl and whisk together to combine until smooth.
  2. Depending on the size of your bowl, add one to two slices of bread at a time to the batter mixture and leave for a few seconds to soak, then turn over so both sides are evenly coated.
  3. Melt 1 tbsp of butter in a frying pan over gentle heat. Once melted, add the batter-soaked bread and cook for 4-5 minutes until browned, then turn over and cook for another 3-4 minutes on the other side. Continue to soak and cook the remaining pieces of bread.
  4. Divide the French toast slices between plates.
For the Caramelized Peaches:
  1. In a separate pan, melt 1 tbsp of dairy-free butter over medium heat.
  2. Add the sliced peaches and cook for 2-3 minutes until they start to soften.
  3. Sprinkle in the brown sugar, vanilla extract, and cinnamon over the peaches. Stir gently to coat the peaches in the sugar mixture.
  4. Continue to cook for another 5-7 minutes, stirring occasionally, until the peaches are caramelized and tender.
To Serve:
  1. Top the French toast with a dollop of dairy-free whipped cream and the caramelized peaches.
  2. Optionally, add a little sprinkle of powdered sugar and maple syrup. Enjoy!
