Gluten Free Italian Sandwich
Ingredients
Marinated Red Onions
- ½ red onion thinly sliced
- ¼ cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- ½ tsp salt
Spicy Mayo
- 1 tbsp mayo
- ¼ tsp hot sauce
- ¼ tsp lemon juice
Sandwich
- 2 slices Franz Gluten-Free Brioche
- ¼ cup shredded mozzarella
- 5 slices genoa salami
- 5 slices mortadella
- 6-8 slices soppressata
- 3 slices tomatoes thin
- ½ cup shredded iceberg lettuce
- sea salt
- cracked pepper
Instructions
Marinated Red Onions
- Place the thinly sliced red onions in a bowl. Toss with the olive oil, red wine vinegar, oregano, and salt until coated. Marinate in the fridge for at least 30 minutes.
Spicy Mayo
- Add all of the spicy mayo ingredients to a small bowl and mix until well combined.
Sandwich
- Place two slices of bread on a baking sheet and top each slice with spicy mayo and mozzarella. Broil in the oven on low until the cheese is melted.
- Once out of the oven, start layering on the salami, mortadella, and soppressata. Top with tomatoes, and salt and pepper.
- Add the iceberg lettuce and a drizzle of the onion marinade dressing on top of the lettuce.
