Instructions
For the French Toast:
- Place all batter ingredients into a shallow bowl and whisk together to combine until smooth.
- Depending on the size of your bowl, add one to two slices of bread at a time to the batter mixture and leave for a few seconds to soak, then turn over so both sides are evenly coated.
- Melt 1 tbsp of butter in a frying pan over gentle heat. Once melted, add the batter-soaked bread and cook for 4-5 minutes until browned, then turn over and cook for another 3-4 minutes on the other side. Continue to soak and cook the remaining pieces of bread.
- Divide the French toast slices between plates.
For the Caramelized Peaches:
- In a separate pan, melt 1 tbsp of dairy-free butter over medium heat.
- Add the sliced peaches and cook for 2-3 minutes until they start to soften.
- Sprinkle in the brown sugar, vanilla extract, and cinnamon over the peaches. Stir gently to coat the peaches in the sugar mixture.
- Continue to cook for another 5-7 minutes, stirring occasionally, until the peaches are caramelized and tender.
To Serve:
- Top the French toast with a dollop of dairy-free whipped cream and the caramelized peaches.
- Optionally, add a little sprinkle of powdered sugar and maple syrup. Enjoy!
