Peaches & Cream French Toast

Indulge in a delightful breakfast with this Gluten-Free Peaches & Cream French Toast. Combining the comforting flavors of cinnamon and vanilla with the sweetness of caramelized peaches, this dish is a perfect treat for a weekend morning or a special occasion.

Ingredients  

  • 8 slices gluten-free bread sliced
  • 1 tbsp dairy-free butter

Batter Ingredients

  • ½ cup dairy-free milk
  • 4 tbsp gluten-free flour
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt

Caramelized Peaches

  • 2-3 peaches sliced
  • 2 tbsp brown sugar
  • 1 tbsp dairy-free butter
  • 1 tsp vanilla extract
  • ½ tsp cinnamon

To Serve:

  • dairy-free whipped cream
  • maple syrup

Instructions 

For the French Toast:

  • Place all batter ingredients into a shallow bowl and whisk together to combine until smooth.
  • Depending on the size of your bowl, add one to two slices of bread at a time to the batter mixture and leave for a few seconds to soak, then turn over so both sides are evenly coated.
  • Melt 1 tbsp of butter in a frying pan over gentle heat. Once melted, add the batter-soaked bread and cook for 4-5 minutes until browned, then turn over and cook for another 3-4 minutes on the other side. Continue to soak and cook the remaining pieces of bread.
  • Divide the French toast slices between plates.

For the Caramelized Peaches:

  • In a separate pan, melt 1 tbsp of dairy-free butter over medium heat.
  • Add the sliced peaches and cook for 2-3 minutes until they start to soften.
  • Sprinkle in the brown sugar, vanilla extract, and cinnamon over the peaches. Stir gently to coat the peaches in the sugar mixture.
  • Continue to cook for another 5-7 minutes, stirring occasionally, until the peaches are caramelized and tender.

To Serve:

  • Top the French toast with a dollop of dairy-free whipped cream and the caramelized peaches.
  • Optionally, add a little sprinkle of powdered sugar and maple syrup. Enjoy!
