Gluten-Free Chocolate Mug Cake

No fancy presentation is needed for a delicious mug cake. This mug cake is basically a gooey brownie in a mug! Mug cakes are a quick and easy treat, especially when you have no desire to bake an entire cake. Here's what you'll need:

Gluten-Free Chocolate Mug Cake

Servings: 1 person
Course: Dessert

Ingredients

  • 2 tbsp dairy-free butter
  • 2 tbsp water
  • ¼ tsp vanilla extract
  • pinch of salt
  • ¼ cup sugar
  • ¼ cup gluten-free flour
  • 2 tbsp cocoa powder

Method

  1. Melt the butter in a mivrowave-safe mug.
  2. Add water, vanilla and salt and stir until smooth.
  3. Add sugar, cocoa powder and flour and stir until all the lumps are out.
  4. Cook in the microwave for 30 - 40 seconds. If you want less of a lava cake texture and more cake, you can cook it for 10 seconds more. You'll have to adjust the cooking time since all microwaves cook differently.
  5. Top with some Cocowhip!

Notes

Sometimes I'll top the mug cake with a few dairy-free chocolate chips before putting in the microwave.
